Our story_

At Hopfengrund_, beer and wine grow side by side — quite literally.
Nestled between hop fields, vineyards, and orchards in Hollenburg, Austria, we craft beers that challenge conventions and celebrate origin. Founded by Julie and Christoph Hoch, biodynamic winemakers with deep roots in natural fermentation, Hopfengrund_ bridges two worlds: the precision of brewing and the intuition of winemaking.

Every beer begins in the field — with self-cultivated hops, herbs, fruits, and grains grown biodynamically or sourced from trusted friends. Many of our beers ferment with wild yeasts, age in wine barrels, or are blended with grapes and musts from local vineyards. The result: living beers full of depth, acidity, and identity.

Hopfengrund_ is not about perfection, but about presence — allowing time, microbes, and craftsmanship to shape what’s in the glass. Since 2025, we are proud members of the Independent Private Breweries of Austria, representing a new, nature-driven chapter of beer culture: one that embraces diversity, authenticity, and the courage to stay wild.

The Fidesser family is a cornerstone of our brewing process. With heart and expertise, they cultivate our barley, rye, and wheat on small plots, applying a meticulous touch and adventurous spirit to each plant. They never impose their stamp on us but dedicate themselves thoughtfully to our shared goals: crafting exceptional beer.

Just as we, as winemakers, carefully tend to our vines, or as brewers focus on hops, the family Haselberger dedicates themselves—perhaps even more so—to their ancient pear trees. Their deep connection to these trees, some centuries old, ensures the pears develop their exceptional character, with high tannins and bold acidity, perfect for our beer.
